Here’s how to make green oil

Marco Catone, into “De Agri cultura” wrote like this

This is how you make green olive oil. Pick the olives up off the ground as soon as possible.
If they’re dirty, wash them and remove any leaves.
You’ll make the oil the next day or three days after you’ve picked them.
The more unripe the olives are when you make the oil, the better it will be.
If there has been frost when you pick the olives, make the oil after three or four days.
Keep the press and the cellar as warm as possible.

Catone

Today in Umbria, of course, people don’t wait for the olives to fall; they pick them directly from the tree.

On everything else, however, I’d say we agree with Cato.
